Fruit integrity and selection in the vineyard combine with spontaneous fermentation in truncated, cone-shaped oak tanks.

Nothing is forced during cellar operations. Macerations are carried out slowly, accompanied by delicate pumping over. Aging takes place in 30-hl Slavonian oak barrels. All the wine produced is initially designated as Brunello di Montalcino in the vineyard. Only the final tastings will determine the exceptional portions that will become Riserva wines. Rosso di Montalcino is born later, during aging, following the careful selection of a wine that could very well be a Brunello.
